Spring Celebrations

by Joanne on April 4, 2010

One of my favorite past times is baking and decorating cakes

Unfortunately, there are only two of us at Apple Crumbles so making all the cakes that I would like to bake and decorate would be a waste

That’s why it’s so nice when people give me a call and order a cake for their special family gathering.  It’s fun for me and, hopefully, as enjoyable for them when they receive the cake

This Spring Celebration cake is a white cake. The first layer of filling is cannoli.  The second layer of filling is vanilla with raspberries.  The third layer of filling is cannoli.  The cake has a vanilla bean wash to keep it moist.  Butter cream frosting in white and yellow.  The “grass” is butter cream with 3 marshmallow eggs in the middle.  Fresh raspberries glazed in apricot adorn the outer edge.

Kalli: Thanks. Have never tried shipping my cakes. We could give it a try and if it makes it in tact, great. If not, you enjoy “cake pudding” for free :)
The cannoli is the filling – same as what is in the standard cannoli pastry but just the filling is used in a cake.
As for Shane, no – he didn’t get any Easter treats. Ted however got yellow bunny Peeps and a pair of bike shorts.

Yes the frosting, cannoli filling, and the cake were delicious, but what got me was the raspberries around the cake along with the raspberry filling – can’t even begin to describe how delicious they were! Thank you SO much!!!

Thank you Bonnie. I was hoping the taste of the cake would be better than it looked. Did you notice I changed the buttercream? I don’t think it is quite as sweet.
