If you are feeling the “Green” and want to celebrate with an easy dessert, try this St. Patrick’s Day celebration Bundt cake.
Of course you can make your favorite vanilla cake from scratch, but if you don’t want to mess around with all that, grab a vanilla cake mix from the store. Here’s how it goes.
- 1 Yellow cake mix
- 1 package of Pistachio pudding powder
- 2 1/3 cups milk + 2 TBS
- 1 tsp vanilla extract (you might want to use almond extract and add to the nuttiness of this cake)
- 3 eggs
- 1/3 cup canola oil
- Your favorite cream cheese frosting
- Festive decorations to finish
Preheat oven to 350 F.Add the cake mix and pistachio mix to a bowl. Stir it around with a fork to remove any floury lumps in the cake mix. This would be like “sifting with a fork”. In a separate bowl, whisk together the milk, vanilla, eggs, and oil. Add to the dry mix and stir to remove all lumps.
Spray a Bundt cake pan with baking cooking spray (it has flour in it) and pour in your mix. Tap it on the counter top a couple of times to remove any bubbles and bake 40 – 50 minutes until a knife comes out clean when inserted into the the highest part of the cake.
Let cool and frost with cream cheese frosting. Decorate as you wish. I made a green and white top hat with a shamrock in the middle.
This cake is so moist with a unique vanilla-pistachio flavor. So good and not so good for you but hey! We’re celebrating, right?!
