As Ted said, “It’s like being in a picture.”  No wind. 37 degrees. A lot of snow. Couldn’t be better for a day in February.

WAFFLING….

No Mess Pumpkin Waffles:  No mess because you mix everything in a bag then toss the bag into the garbage.  No bowls to clean up, only your waffle grill to wipe clean.

  • 1/2 cup all purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup quick cooking oats
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • pinch salt
  • 1 TBS brown sugar
  • 3/4 cup Reduced fat milk (or more if you want them thinner)
  • 2 eggs, beaten
  • 1/2 cup 100% pumpkin puree

Add all the ingredients to a sealable plastic bag.

Get as much air out of the bag as possible then shake it, knead it, squeeze it, play with it for 5 or 10 minutes.  Make sure it is all mixed up (no flour showing).

Heat up the waffle iron or waffle grill that has been sprayed lightly with non-stick cooking spray.

When ready to make the waffles and using a pair of scissors, clip about  1 1/2” to 2”  off one corner of the bag.   DSC_3681

Squeeze about a 1/4 cup or so onto the waffle grill, DSC_3682

it is kind of thick so spread it around with a spoon.

Cook about 5 minutes.
