Another super product to sample from Foodbuzz. Kikkoman Ponzu Lime Seasoning.
What other way to enjoy the flavors of this dressing/sauce than on Tilapia, a tender, mild white fish. A recipe came with the sauce which was for Shrimp Fajitas. I used that recipe as a base to form this healthy pizza. A delight for those rare people who can’t stand stringy, melted cheese. I’ll never understand that one
To Serve 4-5
- 3 4 oz Tilapia filets, cut into pieces.
- 1/3 cup Kikkoman Lime Ponzu
- 1/4 cup lime juice
- 1 clove garlic, minced
- 2 TBS olive oil – separated
- 1 green bell pepper, chopped
- 3/4 cup broccoli florets, chopped small
- 14 grape tomatoes, halved
- 1 TBS fresh cilantro leaves, chopped
- 1/4 cup grated Parmesan cheese
- 1 ready made thin pizza crust* The pizza will be easier to slice if using a thin crust because there is no binding cheese or sauce to hold the toppings on the crust as you slice it.
Mix together the Kikkoman, lime juice, garlic, 1 TBS olive oil, green pepper, broccoli and add to a large sealable plastic bag. Add the fish and toss around until coated.
Preheat the oven to 450 F. Brush pizza crust with remaining TBS of olive oil, scoop out using a slotted spoon the fish and vegetables from the sauce. Place on top of the pizza crust. Make sure to place the thicker or larger pieces of fish towards the outside of the pizza crust, not in the middle. Top with the tomato halves and sprinkle with cilantro and Parmesan cheese. Bake for 15 –20 minutes.
The Ponzu sauce is low in calories, with less sodium than regular soy sauce. It contains ZERO fat and no added MSG.
The flavors of this pizza are fresh and light. No heavy cheese or sauce. A hint of citrus in the background that gives the flavors of the vegetables and fish a delightful boost.
Workout Wrap Up
This week the scheduled workouts have gone really well. I have run approximately 17 miles so far. No less than 25 minutes of weight lifting every day and mostly jogging over walking with Shane during our outings.
Friday is a day of rest so an easy 45 – 60 minute walk is on the agenda. A 10 miler is scheduled for early Saturday morning and I haven’t decided what route will be taken yet. I usually think about the direction of my run as I drive home from work. Sometimes I stick with it and sometimes my feet change direction at the last minute.
Do you plan your running/walking route in advance or do you wait and see what your feet want to do?
Joanne
Joanne, what an awesome idea to put a mild fish on pizza!!! I use Tilapia all the time so this would be a great one to try out.
Thanks Dawn. You come up with some terrific recipes so I look forward to your pizza creation.
That pizza looks good!
I pretty much have all of my workouts planned in advance, but I will adjust them depending on how I feel. Normally I don’t have to make any adjustments, though.
Lori: Thanks.
This pizza looks delicious! I love homemade pizza because the toppings you come up with at home are always so much better than the ones you can get in restaurants. I definitely love cheese on pizza but not the fake disgusting kind. Fresh mozzarella all the way!
Tilapia and lime go so well together…definitely want to try that ponzu sauce!
Happy 10 miler today! God I miss running.
Thanks Joanne.
Interesting flavors for a pizza, but it looks delicious! Homemade pizza is definitely the best.
Thanks Kat
